2oz White Rum / Half a lemon
.75oz Cahoots Lavender
Handful of fresh mint
Slice lemon into quarters and muddle in a shaker. Add mint and muddle gently. Add the remaining ingredients with a small handful of ice and shake gently just to incorporate. Pour ingredients into a double highball glass. Fill with crushed ice and top with soda. Garnish with a mint bouquet or lavender flower.
Note: Treat your mint with some respect, too much muddling and bruising will cause it to become bitter.
